
Ingredients:
- 2 leftover cooked sausages, sliced
- 2 small potatoes, thinly sliced
- ¼ red onion, finely sliced
- Olive oil
- 1 sprig rosemary, finely chopped
- Mozzarella cheese (as much as you like)
- Optional: a few torn bocconcini balls or a mix of cheeses
- 1 pizza base (homemade yeast dough, store-bought, or even leftover pita bread)
Method:
- Preheat your oven to the highest setting—it should be very hot.
- Soften the potatoes: Place the thinly sliced potatoes in a microwave-safe dish and microwave for about 3 minutes, or until slightly softened.
- Prepare the base: Brush your pizza base with a thin layer of olive oil. Sprinkle a light layer of mozzarella over the base—this helps keep the toppings in place when slicing.
- Add the toppings:
- Layer the softened potatoes over the cheese
- Sprinkle with chopped rosemary
- Add the sliced sausages
- Top with red onion
- Finish with more mozzarella and any additional cheese (like torn bocconcini) if using
- Bake: Place the pizza in the oven and bake until golden and bubbling. Cooking time will vary depending on your oven, but about 8 minutes in a very hot oven should do the trick.
Note: We used Arcadia plain sausages in this recipe, but other flavours could work just as well depending on your taste.
